Zucchini Chia Oat Protein Bars


I did a little experimenting with the carrot cake protein bar recipe, and I came up with a new one that tasted to me a little bit like chai tea. I used two zucchini instead of carrots, and I added whole oats as well as chia seeds. For once I am pleased with my experiment, so here's the recipe I used:

Ingredients:
1 cup oat flour
1 cup whole oats
2 scoops vanilla whey protein powder
2 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
3/4 tsp. nutmeg
1/4 tsp. ginger
1/8 tsp. cloves
3 tbsp. chia seeds
1/2 cup honey 
4 egg whites
2 medium zucchini squash, blended

Directions:
1. Preheat oven to 350 degrees.
2. Mix oat flour, oats, whey protein, chia seeds, cinnamon, ginger, nutmeg, cloves, baking soda, and salt together in a bowl.
3. In a food processor, blend zucchini.
4. Add zucchini, honey, and egg whites into oat flour mixture.
5. Spray 8x8 in. glass pyrex dish with non-stick spray.
6. Pour ingredients into dish, and bake 20-30 minutes.

(I made a double batch here. An 8x8 dish makes 16 bars at 5g of protein per bar.)


I've been having the hardest time with this iPhone camera and close-up shots, so I took a ton in different locations with different lighting, and while none of them turned out that well, I think they're worth sharing because of Gracie's ridiculous photo bombing - she's relentless! 



I thought for a second that I finally had a Gracie-free shot, but on the right side you can see her shadow-legs. That sneaky dog! :)


At least in this last one I finally got the plate right-side up...


I'd been making the carrot cake bars, and we'd been eating them so fast that I started making double batches. Rick says he prefers the carrot cake ones, but I think these were pretty good, too, for something a little different. I hope you enjoy them as much as we have!
